yellow potatoes, cut into bite-sized pieces oil oil salt and pepper
a couple big handfuls of spinach a few chopped cloves of garlic olive oil pinch of salt and pepper
Adjust these ingredient to serve whoever is eating.
Preheat oven to 400 degrees. Toss potatoes in oil, salt, pepper. Roast for 20 minutes flesh down or until done. Grease your pan if you're worried about things sticking!
Saute garlic in oil for just a couple minutes. You just want some warm oil with the garlic bite slightly scaled back. Add spinach and let it wilt. Turn off heat.
Put water in a skillet. Add a glug or two of white vingear. Heat to a soft boil. Crack eggs into the water. Poach for 3-4 minutes.
Start the spinach just before the potatoes are done. Start the eggs when everything is done.
It goes: potatoes, spinach, eggs. Top liberally with parmeson cheese!
