Oh boy. I am excited to eat this. I looove baking with apples. My favourite muffins thus far are Pumpkin Apple. Most of the apple coffee cakes I’ve made have been a little denser with some sort of crumble. This recipe is courtesy of Smitten Kitchen. The only thing I changed: recipe calls for 2 c. sugar but I didn’t have enough white so I did 1 c. white, 1 c. brown. Probably would have done that anyway. I’m taking this delightful little cake over to my parent’s tonight for a pre-mother’s day celebration.
It’s back to laundry and packing tomorrow. We’re heading to Edmonton for the week and looking at possible homes. Hoping to nail something down!
